Shrimp Shells from Chile
Shrimp shells is a traditional Chilean dish, typical to the north of the country, and usually served as an aperitif.
Shrimp Shells Recipe
Ingredients
1kg peeled shrimps
6 leeks
1 cup grilled cheese (parmesan preferably)
2 cups of milk
4 egg yolks
5 teaspoons butter
4 spoons yogurt
Oyster shells
Preparation
Cut the leeks in thin slices and fry them in 3 teaspoons of butter. Add the yogurt and cream, stir for a minute and then remove from the heat.
Melt 2 teaspoons of butter and fry the shrimps in it.
Mix the shrimps with the leeks mixture. Add the egg yolks and mix well.
Spread oyster shells with butter and fill them with the preparation. Spread grated cheese over them and grill them in the oven.
Serve with bread.
