Pork Roll from Chile

The arrollado de chancho o pork roll is one of the most traditional dishes of the southern region of Chile. There are different ways to prepare this dish (different spices can be used for example). Here we will explain one:

Pork Roll Recipe

Ingredients:

1.5 kg pork meat
A big piece of pork skin
Salt
Pepper
Oregano
Cumin
2 crushed garlic cloves 
Garlic paste

Preparation:

Cut the pork meat in thin long slices (as long as possible) and then spread salt, cumin, pepper, oregano and the garlic over the slices. Let it rest for an hour in the fridge.

Then extend the pork skin on a table, cover it with the meat slices and roll it as tight as possible. Tie it up with a string that is suitable for cooking. Let it rest for a day in the fridge and then cook it in a saucepan with water (it needs to be entirely covered with water). Add some salt to the water if you want.

Cook until the meat is well done (pork meat always must be cooked thoroughly) (for this recipe it usually takes between 1 ½ and 2 hours but could take longer).  Spread the garlic paste over it and let cool down before serving.
